Make it Minty, Make it Fresh

I am averaging one new recipe each week, which is pretty good considering how little time I have these days. Next week we have a potluck to attend and I am determined to make something different from my usual orzo salad with feta, spinach, and mushrooms. There is a ton of mint in the garden that I haven't touched yet. It seems as though mint pairs well with orzo and feta so I am considering one of the following:
